Cellar

At the design stage of the cellar complex, cultural and building traditions of the local architecture were taken into consideration. As main building material there were used old bricks.



First of all there was built a residential building with an attached cellar. On the ground floor of the building there was a guest hall with fireplace, a tasting room with transparent walls, various agricultural and household pantries. There is also a semi-opened pantry, in which there are the authentic attributes of traditional life: “tone” (stove for baking georgian bread), large tin machine for making grape vodka, an open kitchen and a hall for banqueting.
The cellar is an on-ground building, in which there are taken into consideration all the conditions for the production and aging of wine. There are 22 Kakhetian Qvevri in the cellar. The capacity of each of them is approximately 2 tons. There is also an old wooden winepress, traditional devices for Qvevri caring, old ceramic dishes and 225-300 liter oak barrels.

Over time, it became necessary to create additional rooms for production and reception of guests. In 2018, there was built a new modern type production room and warehouse, which was equipped with an Italian bottling line and other necessary equipment. At the moment, wine is bottled and warehoused here.

Despite modern technologies, the labels are filled manually and also stickered onto the bottles by hand. Here also happens the sealing of bottles with wax. Each bottle undergoes phased visual control and only after that is being warehoused.
In 2019 there was added a new building, that has an underground cellar and on the first floor there is big hall with panoramic views. The second floor – there are living rooms for enlarged family.

The new cellar is located at the depth of 3 meters from the ground level. There are 23 Qvevri in it, 10 of which are Kakhetian and 13 – Imeretian. Such redistribution of Qvevri is a kind of experiment for observing and studying wine technology. For the same purpose Caucasian and French oak barrels are used. They are also used both for fermentation and aging of wine.
